Perjalanan kami tidak dimulai dengan kopi

Berto didirikan pada tahun 1994 oleh Robert Patilaya sebagai fasilitas produksi mesin kosmetik. Beberapa tahun kemudian, selama dekade 90-an kami mulai fokus pada pembuatan mesin pengolah makanan. Kami adalah perusahaan pertama di Indonesia yang memproduksi mesin-mesin khusus seperti enrober, cooling tunnel, extruder dan fryer. Selama bertahun-tahun kami bekerja keras membuat mesin kami dan mengekspor produk kami ke berbagai negara di Asia Tenggara, Timur Tengah, Australia dan Eropa.

Kemudian kami mulai mengenal dan jatuh cinta kepada kopi. Pada tahun 2007 kami membuat mesin roasting kopi pertama kami, roaster konveksi dengan kapasitas 60 kilogram. Satu dekade berlalu sebelum kami memberanikan diri dan memutuskan untuk menggabungkan keterampilan teknis kami, pengalaman kami dalam membuat mesin, dan hasrat kuat kami terhadap kopi menjadi satu. Kami membuat komitmen untuk memindahkan seluruh bisnis kami ke dalam industri roasting biji kopi.

Setiap mesin Berto membutuhkan waktu 6 hingga 8 minggu untuk diproduksi, dari bahan baku menjadi sebuah produk akhir. Semua mesin roaster komersial kami terbuat dari bahan stainless steel yang higienis dan aman untuk bahan makanan, tahan lama, dan juga berpenampilan yang menarik. Semua mesin telah melalui standar proses manufaktur kami yang amat tinggi, kontrol kualitas yang ketat dan pengujian sebelum dikirim kepada pelanggan kami. Apa Itu Drum Roaster?

Ini adalah kebalikan dari metode kontak api secara langsung di mana panas ditempatkan di dalam ruangan drum, bersentuhan langsung dengan biji kopi dan seketika memanggangnya.

Seorang roaster kopi yang ingin mendapatkan kualitas unggul biasanya memilih untuk bekerja menggunakan drum roaster yang menawarkan keragaman dari segi kecepatan drum dan juga aliran udara. Dengan cara ini, operator mesin dapat melakukan pengecekan visual secara teratur selagi proses roasting tengah berlangsung. Setelah proses roasting ini selesai, biji kopi akan jatuh melalui pintu yang terbuka ke dalam wadah pendingin. Di dalam wadah ini, biji kopi didinginkan dengan penyedotan udara panas dan pengadukan konstan. Setelah masa pendinginan dan de-gassing selesai, biji kopi sangrai akhirnya siap untuk dikemas.

What Is A Drum Roaster?

A drum roaster is a method of turning green coffee beans into roasted beans using a cylinder, also called a drum, that is mounted horizontally so that the beans can rotate easily and attain an even roasting process. Usually, the cylinder is heated from underneath, so the beans are roasted slowly as they tumble over inside the chamber without ever contacting the flame. Inside the drum roaster, the beans are roasted directly with the heat from the walls of the drum and also indirectly from the hot air that is trapped inside the drum. This is the opposite of the direct-flame method where the heat is placed inside the chamber, coming into straight contact with the coffee beans and roasting them almost immediately.

A coffee roaster who wishes to obtain a superior quality usually works with drum roasters that offer a versatility to play around with drum speed and airflow. With a variable drum speed, one can determine the agitation of the beans inside the drum, which affects how much of the beans are exposed to the passing hot air at any one time. A spoon is attached at the front plate of the roasting machine,  to take samples whenever necessary during the roasting process. This way, the operator can do regular visual checks of his roast. After the roasting process is finished, the beans fall through an opening door into a cooling bin. In this bin, the beans are cooled down by air suction and constant stirring. After the cooling down and de-gassing period is concluded, the roasted coffee beans are finally ready to be packed.

Slowly the Toraja Sapan variety started to gain recognition as native beans of North Toraja. This was followed by the introduction of Toraja Pulu Pulu beans in 2010 and Toraja Yale in 2014.

Today we are taking a look at one of Berto’s clients, Revoneiro coffee roastery in Malang, East Java. Revoneiro’s philosophy is in its name, and it’s all about achieving your dreams. Starting his coffee journey as a barista in 2006, founder Triadi Setiawan (Iwan) aims to provide great quality coffee at an affordable price. Revoneiro is one of the oldest coffee roasteries in Malang, which was established in 2009. It is currently roasting with the monthly roasting capacity of 800 to 1000 kg of coffee beans sold in their store and also online. Revoneiro currently carries over 40 different varieties of coffee beans, both from domestic and overseas coffee plantations. There are even two varieties native to the Malang area, with the beans harvested from the hills of Mt. Arjuna. Actually, its best-selling bean is the Kopi Arjuna Budug Asu variety.

Revoneiro also sells custom blends to other coffee shops or cafe chains, from both its store and online channels. The sale of these custom blends accounts to up to 20% of Renoveiro’s overall sales.

In addition, the company also runs a coffee shop called Ini Kopi. At Ini Kopi, coffee lovers can enjoy great coffee in a relaxed, casual atmosphere. Its best-selling beverage is es susu kopi kocok (coffee milkshake). The shop sells various coffee beans, coffee powder, syrup, and also tea. Buyers can purchase in small quantities, in order to make the coffee more accessible to everybody.

Coffee Future, Revoneiro Style

Revoneiro Roastery has a positive outlook on the future of the coffee industry in Indonesia, as the industry keeps growing each year and also gets more competitive. Iwan believes that farmers are the key to producing good quality beans, as they conduct the entire process from harvesting the red coffee fruit to turning them into dried coffee beans. Excellent quality beans will attract coffee roasters, who will purchase at a premium price. Hence it is important to educate coffee farmers to increase production quality.

Iwan is actively representing Revoneiro in a number of events, from cupping sessions, talk shows, roasting workshops, and many other events in various locations.

Bayangkan, sekarang anda punya green bean yang hebat dengan score tinggi dan anda juga telah berhasil menyangrainya dengan sempurna. Anda yakin kopi ini akan menjadi favorit. Pertanyaannya, apakah tugas anda sudah selesai? Tantangan anda selanjutnya adalah bagaimana anda bisa mereplikasi profile sangrai juara anda di batch berikutnya, 10 batch berikutnya, atau bahkan 20 dan 30 batch seterusnya.

The Ultimate Goal

Dari sudut pandang pelanggan, hal yang paling menjengkelkan adalah ketika membeli kopi anda untuk kedua kalinya tapi tidak sebaik pembelian pertama. Oleh karena itu, tugas utama anda adalah meroasting biji kopi anda dengan hasil yang konsisten, setiap batch, setiap hari. Konsistensi adalah hal terpenting untuk menjaga brand anda jika anda memutuskan untuk menjalankan bisnis coffee roaster. Brand anda adalah janji kepada pelanggan, dan menjaga konsistensi adalah cara terbaik untuk memenuhi janji tersebut. Dengan menghasilkan produk yang konsisten, barista ataupun pelanggan rumahan anda selalu tau apa yang akan mereka dapatkan dari kopi yang mereka seduh.

Mencapai konsistensi butuh waktu dan usaha. Menyangrai kopi yang baik saja cukup sulit, apalagi melakukannya berkali-kali dengan hasil yang konsisten. Lalu bagaimana kita bisa memastikan hasil roasting kita konsisten dari batch ke batch?

Bagaimana Menjaga Konsistensi?

1. Bikin rencana

Atur tempat kerja anda agar anda bisa bekerja seefisien mungkin. Artinya anda bisa bekerja dengan pergerakan seminim mungkin dimana semua peralatan dan bahan yang digunakan bisa dijangkau dengan mudah, tanpa anda harus banyak pindah tempat. Selain itu, buat rencana roasting (roasting plan), selalu lakukan pengukuran dan cek kualitas green bean sebelum memulai proses roasting.

2. Panaskan mesin sebelum mulai roasting

Memanaskan mesin dengan sempurna sangat penting untuk mencapai konsistensi. Sebelum memulai roasting batch pertama, pastikan suhu mesin mencapai suhu ideal dan pertahankan selama beberapa menit sebelum memasukan kopi ke mesin. Kenali mesin anda agar anda bisa melakukan pengaturan yang sesuai, tujuannya supaya anda bisa mencapai kondisi awal yang konsisten mulai dari batch pertama hingga terakhir.

3. Lakukan PSAB (Prosedur Standar Antar Batch)

Untuk memastikan agat batch berikutnya dimulai dengan kondisi yang sama seperti batch sebelumnya, anda harus membuat dan menjalankan prosedur standar antar batch, kadang disebut between batch protocol. Hal yang umum dilakukan salah satunya adalah mengecilkan atau mematikan burner dan membuka pintu drum. Tujuannya untuk mendinginkan suhu permukaan dan udara dalam drum. Anda bisa juga meningkatkan airflow (aliran udara) sehingga volume udara dingin lebih cepat masuk ruang drum. Setelah suhu mesin turun, hidupkan burner dan panaskan mesin secara perlahan hingga mencapai suhu awal yang diinginkan.
Yang perlu diingat adalah setiap mesin punya sifat heat transfer yang berbeda, sehingga prosedurnyapun pasti berbeda. Apapun sifat mesin dan teknik anda, pastikan anda membuat prosedur standar antar batch dan selalu jalankan dengan disiplin.

4. Pahami sifat heat transfer mesin anda

Anda harus kenali mesin anda, terutama dari sisi heat transfer. Pengetahuan ini sangat membantu dalam membuat prosedur standar antar batch. Selain itu, memahami sifat mesin akan membantu anda melakukan pengaturan parameter selama proses roasting, misalnya: berapa lama sebelum first crack anda harus mengurangi energi burner untuk menghindari flick atau crash? Penyesuaian apa yang harus anda lakukan jika menyangrai di pagi, siang atau malam hari? Jika hujan, apa yang harus dilakukan?

Ada beberapa mesin roasting yang menggunakan teknologi resirkulasi udara, salah satunya Berto tipe R Roaster. Dengan resirkulasi, suhu ruangan dan cuaca tidak banyak berpengaruh terhadap proses roasting anda, karena hampir tidak ada udara sekitar yang dihisap ke dalam drum. Alhasil anda dapat melakukan roasting disegala cuaca dan waktu dan tetap mendapatkan hasil yang konsisten.

5. Rekam dan review lagi data roasting anda

Evaluasi dan lakukan cupping secara teratur, catat susut berat setelah roasting, lakukan sampling acak untuk diinspeksi. Simpan roast log (profile) anda, boleh secara manual (ditulis), atau jika mungkin, gunakan software. Anda bisa review ulang catatan ini untuk melakukan peningkatan di masa depan.
Dengan menggunakan software, anda akan fokus pada proses roasting, tidak perlu memecah konsentrasi untuk melakukan pencatatan. Selain itu, software akan memberi anda pemahaman lebih dalam atas proses roasting yang anda sedang/telah lakukan, yang sebelumnya tidak bisa anda dapatkan dengan pencatatan manual.

Semua mesin Berto bisa dihubungkan dengan komputer sehingga anda bisa melakukan data logging dengan bantuan software. Mesin roasting tipe D Roaster dapat menerima profile yang telah anda simpan dan melakukan pengaturan burner secara otomatis untuk mereplikasi profile tersebut. You have found a great green coffee and successfully roasted a beautiful batch. You are confident that this coffee will be the star of your business. How can you replicate the result for your next batch, and also the next ten, the next twenty, the next thirty batches after that?

The Ultimate Goal

From a customer’s point of view, there is nothing more frustrating than repeating the purchase of a particular coffee to later find out that the product is not quite the same compared to the previous purchase. Hence the ultimate goal of a coffee roaster is to provide coffee beans with consistently good quality. In fact, it is paramount for a coffee roaster to have a consistent result at every single batch. Consistent results mean baristas and customers are ensured that they will get the same cup every time. Inconsistent results cannot be sold and they cut directly into the roaster’s profit.

However, achieving consistency takes time and effort. Roasting good quality coffee can be hard enough on its own, consistently doing so, again and again, is much harder. How do we measure and ensure consistent roasting on every single batch?

How To Keep It Consistent?

1. Plan ahead

Organize your workspace so you can move around efficiently and find everything you need easily. Before you get started with the roasting process, measure out the green coffee beans for the batches that you will roast for the day, and inspect their quality.

2. Preheat your roaster

Preheating is necessary to ensure consistency. At the beginning of a roasting day, make sure the roaster reaches the ideal roasting temperature and let it idle in that temperature for a few moments before you put the beans in. Ideally, this should be the same condition from the first batch to the last.

3. Make a standardized routine between roasts

To ensure the next batch enters the roaster at the exact same condition as the previous one, it is important to standardize the process between roasts. Make sure the roaster is open for the same amount of time after each batch and to get clean air to flow in. Afterward, preheat the machine and let idle again. The most important thing is to have a set protocol of what to do between roast batches.

4. Understand the heat transfer

You need to really know how your roaster machine performs, not only in its own characteristic but also in relation to the environment (hot or cold climate, humidity, etc).

5. Record and study your roast data

Make sure you cup and evaluate the beans regularly, track the weight loss incurred from the roasting process, and taking random samples of the roasted beans for inspection. Keep a roasting log of all the roasts either manually or with an app. Store all the data in a spreadsheet so you can compare the results over time and aim for improvement.

Indonesia is the fourth-largest coffee producer in the world after Brazil, Vietnam and Colombia. Coffee cultivation in Indonesia started in West Java in the late 17th century in the early Dutch colonial period, and has since played an important part in the country’s growth and development. Indonesia is well-suited for coffee plantations, since geographically it is located near the equator and with many mountainous regions on the main islands, creating perfect microclimates for the growth and production of coffee beans.

Major areas for coffee cultivation

According to USDA’s Gain Report, Indonesia produced 10.6 million bags (about 650,000 tonnes) in 2018/2019. More than 90% of Indonesia’s coffee beans are cultivated by small-scale farmers with relatively small plantations of around 1-2 hectares each. These are main areas for growing coffee beans in Indonesia:

  • Sumatra
    Sumatra is the largest coffee-producing region in Indonesia, producing up to 75% of the country’s coffee beans. The three well-known regions are Mandailing, Lintong and Gayo in North Sumatra.
  • Sulawesi
    The primary region for Arabica production covers the Toraja highlands in South Sulawesi. The regions of Mamasa and Gowa also produce Arabica, although they are less well-known.
  • Java
    Nowadays the coffee plantations in Java produced mainly the higher-valued Arabica variety. The production is centered on the Ijen Plateau, East Java, at an altitude of more than 1,400 meters.
  • Bali
    The highland region of Kintamani is the main coffee-growing area on Bali. Many coffee farmers on Bali grow organic coffee, or at least use organic fertilizers without agrochemicals.
  • Sumbawa and Flores
    The western slopes of Mount Tambora is the main coffee-growing area in Sumbawa island, while coffee from Flores is grown at 1,200 to 1,800 meters on hillsides and plateaus.
  • Papua
    Coffee beans from Papua come from Baliem Valley and Kamu Valley, both areas lie at altitudes between 1,400 and 2000 meters. Chemical fertilizer pesticide and herbicide are unknown in these areas, which makes the coffee both rare and valuable.

Coffee Bean Varieties

Coffee beans in Indonesia consist of arabica, robusta and liberica, with robusta making up about 80% of the country’s coffee production. About 25% of Indonesia’s coffee beans export is Arabica beans, and the balance is Robusta. The Liberica beans are produced in limited number by certain areas mainly in Sumatra.

In general, Indonesia's Arabica coffee varieties have low acidity and strong bodies, which make them ideal for blending with higher-acidity coffees from Central America and East Africa. The Robusta variety is grown at lower altitude than the Arabica, the resulting beans are used in instant coffee and other manufactured products.

The most unusual form of coffee processing in Indonesia is “kopi luwak”. This coffee is processed by the Asian palm civet (Paradoxurus hermaphroditus) that eat ripe coffee cherries and process the fruit in their digestive system. The discarded coffee beans are collected and washed. Due to the fermentation process inside the stomach, and also the fact that the civet chooses only the best quality cherries, the result is a smooth, mild cup, with a sweet after-taste. Kopi luwak is very rare and expensive.

The Future of Coffee in Indonesia

Domestic consumption of coffee continues to rise due to strong demands for ready-to-drink coffee products and the expansion of coffee retail outlets. According to the data from the Association of Indonesian Coffee Exporters (AEKI), the Government is working closely with Indonesian farmers on a plan to expand Indonesia's coffee plantations, while rejuvenating old plantations through an intensification program.

Due to increasing global and domestic demand, a significant improvement in the country's coffee sector is needed. Not only to increase the quantity of coffee beans, but also to enhance the technological innovations in coffee processing. Hopefully this will result in the increase of the value of Indonesia’s coffee beans in the global market.
